Review: Baked Barbecue Chicken and Barbecue Sauce (SBD)

For dinner tonight, we ate the Baked Barbecue Chicken, courtesy of the “South Beach Diet Quick & Easy Cookbook”.  It is a Phase 1 meal that basically calls for boneless, skinless chicken breasts to be coated with South Beach Barbeque Sauce (recipe follows on the next page of the cookbook) and baked for about 20 minutes.  Since it is a nice day out, DH decided to skip the baking and grill them up instead.

The sauce itself isn’t a very sweet sauce – it is more on the vinegary/savory side – so be forewarned if you’re expecting something sweet!  Even still, I thought it was quite good.  The Worcestershire sauce gave it a nice little kick which I enjoyed.  (Does anyone actually know how to pronounce that sauce?  I’m a rather intelligent woman and yet I always have to mumble-fast-speak when I say it for fear someone will think I am less than cultured because of my pronunciation.)  I’d be curious to try this recipe and bake the chicken as recommended.

Total prep time took about 10 minutes and that was to make the sauce.  If following the recipe exactly (baking the chicken), plan on another 10 minutes of prep, according to the cookbook.
