Review: Beef and Bean Chili

Last week we had beef and bean chili – a recipe from “The South Beach Diet Quick & Easy Cookbook”.  We just had it plain, but next time I think we’ll try it topped with low-fat sour cream and low-fat cheddar cheese.  The great thing about this recipe is it made so much chili that we had it the next night on top of some whole wheat spaghetti (Phase 2).  If you’re not in Phase 2 yet, the chili just as it is works very well for Phase 1.

In my book, the best thing about this dish are the seasonings – the onion, garlic, cumin and chili powder.  Since it has diced tomato in it (and I have texture issues), I needed something to make me forget about the chunks.  We actually used petite diced tomatoes in the chili, so that helped as well – smaller chunks 🙂

Ease: Weeknight Dinner

Whole-Family Appeal: 3 of 3 thumbs up (only caveat is that DS didn’t like the kidney beans!)

Wouldeatitagain Factor:  Yep – even tastes good as leftovers!
